Gallon is a unit of measurement for liquids. It tells us how much liquid something can hold.

For example, imagine you have a big bottle. A gallon is like having 8 big cups of water in that bottle. So if you pour water into the bottle until it's full, you can say that the bottle holds one gallon of water.
